Details: Windstorm Wednesday! I took shelter from the blustery evening w/ a bowl of beef brisket/meatball/tripe pho.
Each person doctors up pho soup their own way. I squeeze the juice of 3-5 limes in, tear up three basil leaves and scatter them in, then add copious mounds of bean sprouts. Quick stir with my chopsticks, then I top it off by swirling approximately six rounds of Hoisin sauce & four rounds of Sriracha over the noodles in the bowl. I stir it around once more to get the ingredients merried together, and to further saturate the bean sprouts so they soften quicker.
When I lived back in Seattle, pho was a commonplace dish in the rainy winter… as well as a weekend staple to cure colds and hangovers.
