Steak & Risotto
Risotto simmered in oxtail gravy reduction
What: The steak garnished w/ parsley and garlic and oven-roasted asparagus & tomatoes should have been tantamount here. But the starchy goodness they hover on top turned out to be the true star of the plate.
Why: Dinner conundrum… we were out of chicken broth to cook the risotto in but had already started the steak and vegetables. We looked around and I found the gravy reduction we saved from cooking Oxtail Stew during Valentine’s Day a few weeks back. The rich flavors of wine, mirepoix and oxtail meat all sprang forth in the risotto. I can’t wait to eat it again!
